1 cup rolled oats
3/4 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup unsweetened applesauce
1/4 cup honey or maple syrup
1 egg
1/4 cup coconut oil, melted
1 tsp vanilla extract
1/2 cup raisins or dried cranberries (optional)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
In another bowl, mix applesauce, honey, egg, melted coconut oil, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Fold in raisins or cranberries if using.
Drop spoonfuls of the dough onto the prepared baking sheet.
Bake for 12-15 minutes, or until the edges are golden brown.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a crisper cookie, flatten the dough slightly before baking. Keep an eye on them to prevent over-baking.
