Ingredients
  

  • 1 cup rolled oats
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 cup raisins or dried cranberries (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  • In another bowl, mix applesauce, honey, egg, melted coconut oil, and vanilla extract until well combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Fold in raisins or cranberries if using.
  • Drop spoonfuls of the dough onto the prepared baking sheet.
  • Bake for 12-15 minutes, or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a crisper cookie, flatten the dough slightly before baking. Keep an eye on them to prevent over-baking.
